Corned Beef Hash Patties

One of my favorite breakfast for dinner meals! This simple and cheap recipe is a fun twist on corned beef hash and is a go to easy dinner for me! Oh and I forgot to mention that it is absolutely delicious and will be loved by all those who enjoy corned beef hash.


You will need:

  • 2 cans of Libbys corned beef

  • 6 Yukon gold potatoes (peeled or unpeeled if you enjoy the skin)

  • 2 large eggs

  • salt and pepper

  • 4 tbsp vegetable oil


  1. Dice potatoes, then boil them in a medium pot until fork tender. allow potatoes to cool.

  2. Add cooled potatoes to a large mixing bowl and mash them until they are the consistency of chunky mashed potatoes.

  3. To the bowl add in the corned beef, eggs, 1 pinch of salt and 2 pinches of pepper. mix all ingredients until well combined.

  4. Heat the oil in a large frying pan over medium high heat. Using your hands form patties with the corned beef mixture, patties should be roughly the size of your palm.

  5. Add the patties to the pan and cook until dark brown and crispy, roughly 3 minutes on each side.

  6. Serve over white rice, fry an egg to thrown on top and enjoy!
