One of my favorite dishes to make in less than an hour. It goes great over rice or pasta and works as a great meal prep dish.
2 8oz cans cream of mushroom soup
1/4 cup sour cream
6 slices Swiss cheese
1lb sliced white mushrooms
4 tbsp butter
2 tbsp minced garlic
1 tsp oyster sauce
1/8 cup white cooking wine
juice of 1 lemon
chicken breast
salt and pepper
Season chicken with salt and pepper and grill till completely cooked.
Add cream of mushroom to a sauce pot over medium heat, add in cheese until completely melted, remove from heat and add in sour cream.
In a large sauté pan, sauté the mushrooms, 2 tbsp butter, and garlic together over medium high heat.
When mushrooms are almost fully cooked, add in white wine and recuse by half. Add in the rest of the butter and the oyster sauce. Cook for 2 more minutes. Remove from heat and add in lemon juice.
Serve the mushrooms and sauce over the chicken and enjoy with pasta or rice.
