A staple household comfort dish in Hawaii! This sweet and savory chicken dish is extremely delicious, easy to make, and the most tender chicken you will ever eat. This dish I grew up eating as a kid is perfect when you need an easy family dinner or even a great meal prep option.
You will need:
2 cups soy sauce (aloha shoyu brand preferred)
2 cups granulated sugar
1 cup water
1 tsp red pepper flakes
2 1in thick slices fresh ginger root
1 tsp sesame oil
2 pounds bone in skin on chicken thighs or leg quarters
In a large pot, combine all ingredients except for the chicken. Bring to a boil over medium high heat, stir to make sure all sugar is dissolved.
Once boiling, add in chicken. Simmer chicken in the liquid for 1 hour.
Serve over white rice and enjoy. I like to enjoy mine with a side of macaroni salad as well.
